Greek Salsa

Ingredients
2 cups English cucumber, diced
2 cups Roma tomatoes, diced, seeded
1/2 cup Red onion diced
1 cup Bell pepper, diced
1 Tbsp. Olive oil
1 Lemon, juiced
1 Tbsp. mint, fresh, chopped
1/2 tsp. Salt
1/4 tsp black pepper
Method
- Combine all ingredients and chill.

Serving size: 1/2 cup
Chef’s Note: Serve this with greek pork or on top of your favorite fresh catch. This salsa will keep in your refrigerator for 5 days.
